Dede at The Customs House

Located in the coastal village of Baltimore, West Cork, this project involves the redevelopment and extension of the Michelin-starred Dede Restaurant, led by acclaimed chef Ahmet Dede.

The proposal introduces a contemporary extension to the rear of the existing building, carefully positioned to preserve its character and prominence within the historic streetscape. The design creates a more generous dining environment centred around an open kitchen, bringing guests closer to Ahmet Dede and his team's culinary craft. Improved circulation and a stronger connection with the outdoor dining area further enhance the restaurant experience.

The architectural approach draws inspiration from both the rugged landscape of West Cork and Ahmet Dede's Turkish heritage. A carefully considered palette of natural stone, lime render and timber combines local materials with subtle references to traditional Turkish craftsmanship, creating a distinctive architectural identity.

The result is a refined contemporary intervention that respects the character of the original building while providing an elegant and welcoming setting for one of Ireland's most celebrated dining destinations.
